- ex : Crémeux de pomme de terre, Poireau confit sous-vide, sablé poireau brûlé, peau de pomme de terre et julienne de poireau frite, jus corsé des racines de poireaux et peau d’oignons.
- Dessert autour d’un fruit de saison (clémentine / orange, pomme / poire, citron, pamplemousse, kiwi ..)
- Exemples :
- Pavlova revisitée clémentine et pamplemousse (meringue française, crème montée clémentine, gel d’agrumes, espuma pamplemousse, agrumes pochés).
